Riyana Rupani’s Overnight Sugar-Free & Grain-Free Muesli

It’s easy to eat clean with this fuss-free breakfast treat

Clean-eating in the morning can be difficult, with households getting hectic as adults rush to log on and in some cases, multi-tasking getting the kids ready for school. More often than not, we settle breakfast with two slices of plastic white bread paired with sugar-loaded spreads which is packed with nasties and lacks nutrients to power us through the day. 

To help our Soothe fam eat better with less fuss, Riyani Rupani — a Certified Holistic Nutritionist (NTP), Whole30 coach, recipe developer, and creator of Healthy-ish & Happy — shares her favourite recipes . A mother herself, she understands how people often fall off the rails while trying to eat clean, as sometimes there’s just so little time to properly make food.

Here is Riyana’s muesli breakfast recipe that requires little time and zero culinary skills – just mix it up and pop it in the fridge the night before, add your optional toppings in the morning and voila! 

This sugar-free bowl of goodness gets its natural sweetness, along with fiber, from shredded apple, which means kids would love it as well. Feel free to switch up the nuts and seeds in your bowl based on your liking. See below for the full recipe.

Overnight Sugar-Free & Grain-Free Muesli

Preparation time: 12 hour

Cooking time: N/A 

Total time: 12 h

Ingredients:

  • 3/4 - 1 Cup Dairy-Free Milk of choice (I like a combination of coconut and almond)

  • 3 Tbsp Almond Meal

  • 3 Tbsp Shredded Coconut

  • 2 Tbsp Chia Seeds

  • 1 Tbsp Flaxseed Meal

  • 1/4 tsp Vanilla Extract

  • 1/4 tsp Cinnamon or Ground Cardamom Powder

  • 1 Apple Shredded (red for sweeter, green for a little tart.  I like a combo!)

  • 2 Tbsp Chopped Nuts of choice

    Optional Toppings

  • Additional Chopped Nuts

  • A few Dried Cranberries or Raisins

  • A Drizzle of Nut butter

  • Fresh berries

Instructions:

  1. Combine all ingredients in a large mason jar or bowl. Mix well and store in a container with a lid.

  2. Refrigerate overnight 

  3. Stir in the morning and add a bit of milk or water to loosen. 

  4. Add any toppings if desired.
