Gluten-free Banana Blender Pancakes

Kids and adults alike, there’s nothing better than a healthy, gluten-free pancake recipe to start the day off on the right foot.  Riyana Rupani — a Certified Holistic Nutritionist (NTP), Whole30 coach, recipe developer and creator of Healthy-ish & Happy — shares her easy pancake recipe that is fuss-free, gluten-free, rich in nutritional value and still tastes like happiness in every bite. Prepped and cooked in just 20 minutes, you can enjoy freshly-made, guilt-free pancakes on busy mornings.

To increase the nutritional value of these babies, there are tons of add-in options. Riyana’s favourites are collagen, flax meal and spinach (green pancakes💚). The bananas give the pancakes natural sweetness but you may add date paste or maple syrup to the mix if you have a sweeter tooth. Riyana highly recommends soaking the oats overnight with a little acid (either lemon juice or apple cider vinegar works fine) to help break down the phytic acid and make them easier to digest. If you’re avoiding gluten, get those that are labelled clearly as gluten-free on the packaging as there may be a risk of cross-contamination if they are packaged in the same place as gluten-containing items.

Gluten-Free Banana Blender Pancakes

Preperation time: 5 MIN

Cooking time: 15 MIN

Total time: 20 MIN

Ingredients:

Pancake Batter

●      2 cups gluten-free rolled oats

●      1 cup water

●      2 Tbsp coconut oil

●      2 eggs

●      1 tsp vanilla extract

●      1 ripe banana

●      2 tsp baking powder

●      dash cinnamon

●      pinch of salt 

Topping Options

●      maple syrup

●      coconut yogurt

●      nut butter

●      berries, banana or any other fruit

Instructions:

1.    Add all your ingredients into your blender and blend until you get a smooth batter.

2.    Heat up your frying pan and grease with butter, ghee or coconut oil.

3.    Pour your batter onto your frying pan once it is hot.  Let the base of the pancake set, should take about 1-2 minutes before flipping and cooking the other side.

4.    Serve hot with toppings of choice
