How can we argue with that, especially when the cookies in our hands are gluten-free and sugar-free. None of those nasties! These yummy yet health-friendly treats aren’t even a chore to make either – Lynda, our Co-founder, made a whole batch in just 15 minutes, including bake and prep time! And there’s only just three steps you need to follow, it doesn’t get simpler than this.

Moist and delish, these guilt-free treats are perfect for morning coffee catch-ups at home or when you need a sweet treat. Read on to start baking!

Gluten & Nasty Sugar-Free Oatmeal and Raisin Cookies
Preparation + Baking time: 15 MIN

INGREDIENTS:

·      1/2- 1/3 cup honey or maple syrup depending on how sweet you want them

·      1/4 cup coconut oil

·      1 large egg

·      1 tsp vanilla extract

·      1 cup gluten-free oats

·      1/2 cup almond or coconut flour

·      1 tsp baking powder

·      1 tsp cinnamon

·      1/4 tsp salt

·      1/4 cup cranberries (optional)

·      1/4 cup raisins

METHOD:

1.    Whisk egg and blend with oil and vanilla extract.

2.    Add to rest of the ingredients and stir well.

3.    Dollop into small flat circular rounds (6-8 cookies) and bake for 10 min at 200 degrees Celsius.
